To establish this classification, six criteria were used: quality of the meat (taste, terroir, character, parsley, cutting, preparation, tenderness), origin and selection of the meat (maturation, origin, breed), quality of service and knowledge of the product, explanation of the cuts, reservations and appearance of the restaurant).
