The concept of brunches which had been a hit in Rodez in 2021 has been transformed into a restaurant, on the Place du Bourg, since the beginning of April.
Since Wednesday April 6, 2022, Emilie Fleys and Edouard Albaret have opened their Touósto restaurant in Rodez, at 26 place du Bourg. The name of the establishment should bring back good memories, since it is hidden behind the brunch initiative which had delighted the Ruthenians in February 2021, a period when the restaurants had to close their doors again.
These gourmet brunches with seasonal products have been a real success for several months, and they are back in Rodez every Sunday. “We have a cold buffet and hot dishes that we try to make plentiful while adapting with the products of the moment, every week”, presents the co-manager Edouard Albaret. “There are few places open on Sundays in Rodez to eat, rest, share… So we wanted to offer a place to meet, with a concept that stands out a little”.
Whether it’s weekend brunches, or the more classic catering of the week, Touósto is betting on “90% local cuisine”. And the location is more than ideal for the establishment which works with market products to develop its menu. The wines and beers can also change from week to week depending on the discoveries, and different homemade desserts find their place every day on the large counter of the restaurant.
After a serious accident, she returns to the kitchens
After the concept of brunches launched in 2021, the idea of opening a restaurant ran through the minds of Emilie Fleys and Edouard Albaret. A certain crush on the premises on rue du Bourg suddenly accelerated everything, and three months of work led to the opening.
This restaurant is also a new beginning for Emilie, who was for a time away from the kitchens due to a severe accident which fractured her vertebra in 2020. In this period marked by confinements and difficulties in catering, morale was at its lowest for Emilie.
She nevertheless becomes chef de partie at Café Bras, an establishment she dreamed of joining. “We had to assume to ask others to carry things for me, to get help… But it’s really a great team, I’ve always been supported”. In February 2021, at the instigation of Edouard, the young cook is in charge of preparing the brunches which have delighted the whole city of Rodez, and each smile she encounters gives her confidence. “Customer feedback is what gives me strength”.
Until arriving at the opening of his own restaurant: “it’s been two years since I had been so happy and fulfilled!”. Even though Emilie Fleys still suffers from muscle pain, the restaurant’s kitchen has been specially designed for her. The worktops are at his height, everything is on wheels to avoid carrying, and the room is large enough to give free rein to gourmet creations.
